Jable de Tao, a winery that has revolutionised the Lanzarote wine scene by presenting its second vintage, the 2023, and several very different white wines. Jable is the name given to volcanic sand, these tiny black rocks, smaller than the so-called ‘rofe’, which abound in the Canary Islands.

The maker of these wine marvels is Carmelo Peña, known for his own project in Gran Canaria (Bien de Altura), but with extensive previous experience in winemaking in Lanzarote.

Tao Paraje is a new wine, coming from old vines over 100 years old grown in ditches or sand pits around the village of the same name. Variety of soils, which can range from clay in the lower areas to limestone bedrock in the higher elevation plots.

This wine ferments in foudre and porcelain amphorae, where it will also be left for 10 months to refine on its lees.

Limited production of 5,000 bottles.

Our sensations: a perfect wine for lovers of Canary Island wines, subtle reductive notes (of crushed stone, ash and smoke), together with citrus and floral hints, usual for volcanic malvasia. In the mouth it has a marked acidity, perfectly balanced with its 12º of alcohol, and a long aftertaste.
