Rayco Fernandez and his team in El Hierro present the Bimbache Vinícola project.

Bimbache John Stone Blanco 2024 comes from El Hierro in the Canary Islands, from a unique vineyard known as Juan Piedra (= John Stone in English), planted more than 60 years ago in the upper part of Frontera on sandy volcanic soils. Made from an equal blend of Vijariego Blanco and Listán Blanco, it offers a distinctive expression of the island's Atlantic viticultural character.

The grapes are harvested in several passes and fermented with indigenous yeasts. The wine then spends nine months on its fine lees in used oak barrels of different sizes. The result is a remarkably fresh and precise white wine, showing attractive reductive, smoky and flinty notes, a chalky texture and a vibrant, savoury finish.

With just 1,900 bottles produced, John Stone is a wine for those looking for distinctive origin-driven whites, indigenous Canary Islands varieties and low-intervention winemaking. Deep, saline and elegant, it also has the acidity and structure to develop beautifully in bottle. An especially compelling choice for gastronomic wine lists and for pairing with seafood, fish and ingredient-focused cuisine.
