Rayco Fernandez and his team in El Hierro present the Bimbache Vinícola project. As stated on the label, the vineyard managers are Esaú Suárez and Silvia Viot, whilst the winemaker is Pablo Matallana.
Bimbache Chivo Blanco 2020 is a unique white wine from El Hierro, made from a blend of native varieties such as Malvasía, Moscatel, Vijariego, Listán Blanco, Gual, Pedro Ximénez, sourced from vines around 20 years old growing on volcanic soils near Sabinosa, close to the Atlantic (at 50 meters above sea level and some 200 m from the coast). The winemaking process combines fermentation with native yeasts and minimal intervention. Fermentation takes place in stainless steel (except for the Malvasía, which ferments in barrels), followed by 12 months’ ageing in Austrian oak barrels. Brief skin contact helps to preserve the wine’s purity and texture.
Despite its age, it is fresh and expressive on the palate, with notes of tropical fruit (mango and pineapple), apple and toasted almonds, whilst retaining its volcanic nuances of crushed stone aromas, and a vibrant, slightly unctuous palate with a long, slightly salty finish.
Around 2,600 bottles were produced of this vintage.
