Bimbache Cruz del Calvario Non Plus Ultra 2023 is a very limited-production cuvée made from grapes sourced from different parts of El Hierro, bringing together a remarkable diversity of indigenous white varieties including Verijadiego Blanco, Listán Blanco, Uval, Baboso Blanco, Verdello and others. The warm 2023 vintage resulted in a wine with greater ripeness and breadth while retaining the Atlantic and mineral identity of the island.
Fermented with indigenous yeasts, the wine spent 18 months on its lees in stainless steel and used barrels, followed by a selection of the best barrels and a further year of ageing between barrel and stainless steel. The result is a complex, polished white with ripe fruit, integrated acidity, texture and a distinctive saline character. For the 2023 vintage only 1,550 bottles were produced, bottled in May 2025
