Legrand-Latour is the project of Thibault Legrand, a grower based in Œuilly, in the Vallée de la Marne, working with small vineyard plots through a philosophy focused on terroir, geology and minimal intervention. His Champagnes aim to express the character of each soil and vineyard site with precision, using spontaneous fermentation, oak ageing and low or zero dosage to preserve the wines' natural identity.
Éocène 2021 is a Brut Nature Champagne made from 75% Meunier and 25% Chardonnay, sourced from organically farmed vineyards in Verneuil and Vandières, in the Vallée de la Marne. It forms part of Legrand-Latour's geological trilogy and aims to express the complexity of the strata formed during the Eocene period, with marl, clay, sand and limestone deposits contributing depth and mineral character.
The wine follows a minimal-intervention approach, with 12 months of barrel ageing on the lees, tirage using grape must and no added sugar or sulphur in September 2022. The disgorgement took place in January 2026 and the wine is released as a Brut Nature, with 0 g/l dosage, allowing it to express its origin and evolution with minimal intervention. 5,727 bottles made.
The wine shows ripe red fruit, brioche, undergrowth and pronounced chalky minerality. Broad and structured, yet fresh, with a persistent mineral finish, it is a highly gastronomic Champagne suited to poultry, roasted meats, game, charcuterie, mature cheeses and mushroom dishes.
