In this case we are talking about an oloroso, made from palomino in Jerez de la Frontera. The wine spends an average of 12 years in the process of biological ageing (under the veil of flor), then the selected butt is bottled "en rama", i.e. without undergoing excessive filtering, so it may present some small sediment.
The Diatomists Oloroso is delicate, lacking the power and high alcohol attributed to this style of sherry, and with its elegance it is more reminiscent of a Palo Cortado.
