In this case we are talking about an Amontillado, made from Palomino in Jerez de la Frontera. The wine spends an average of 12 years in the process of biological ageing (under the veil of flor), then the selected butt is bottled "en rama", i.e. without undergoing excessive filtering, so it may have some small sediment.
Although it is labelled as an ‘Amontillado’ and does not have a long or oxidative ageing process, its organoleptic qualities are reminiscent of a Palo Cortado due to its stronger character (similar to an Oloroso) and not so fresh (similar to a Manzanilla).
