Diatomists Manzanilla Single Pago Miraflores Baja

For Sherry wines lovers we present a collection from Diatomists, casks tasters, who search for authentic gems among the different stockists in the region to offer the most authentic of each category of these traditional wines.

In this case we are talking about a Manzanilla, made with Palomino from Sanlúcar de Barrameda. The grapes come from one of the best single vineyards - Pago Miraflores Baja. The wine spends an average of 5 years in the process of biological ageing (under the veil of flor), then the selected cask is bottled "en rama" or without excessive filtering, so it may present some small sediments.

Although it is labelled ‘Manzanilla’ and it is not aged for a long time, its organoleptic qualities are more reminiscent of a Manzanilla Pasada, a more mature version of otherwise refreshing Manzanillas.
