Champagne Cose is the project of Victor Allier and Gil Conejo, founded in 2022 in Chouilly as a micro-négociant. They source small quantities of grapes from trusted growers and produce site-, variety- and vintage-driven wines rather than following a single house style.
Their approach is based on minimal intervention, natural fermentations and ageing in used oak barrels, including barrels sourced from Jacques Selosse. Production is extremely limited and, so far, their wines have been made without added sulphites, with the aim of showcasing the diversity of Champagne through different terroirs, grape varieties and growers.
Cose Perseval CMY R.23 is a 100% Pinot Meunier Champagne from the La Pucelle single vineyard in Chamery 1er Cru, in the Montagne de Reims. The vines, planted in 1960, are rooted in sandy and limestone soils, giving the Pinot Meunier freshness, tension and a distinctive mineral expression. CMY refers to Chamery, while R.23 stands for the 2023 harvest.
The grapes come from Thomas Perseval and were pressed at his winery using a vertical Coquard press. The juice was immediately transported to Chouilly, where it underwent natural fermentation in used 225-litre barrels, including barrels sourced from Jacques Selosse. After 18-24 months ageing on the lees, the wine was disgorged in July 2025 without dosage, making it a Brut Nature. Only 1,632 bottles were produced.
This is a Champagne of purity, tension and pronounced mineral character, showing a more precise and profound side of Pinot Meunier than the variety's more straightforward, fruit-driven expressions. A highly limited and gastronomic cuvée, particularly suited to wine lists focused on small growers, distinctive vineyards and minimal-intervention Champagne.
