Champagne Cose is the project of Victor Allier and Gil Conejo, founded in 2022 in Chouilly as a micro-négociant. They source small quantities of grapes from trusted growers and produce site-, variety- and vintage-driven wines rather than following a single house style.
Their approach is based on minimal intervention, natural fermentations and ageing in used oak barrels, including barrels sourced from Jacques Selosse. Production is extremely limited and, so far, their wines have been made without added sulphites, with the aim of showcasing the diversity of Champagne through different terroirs, grape varieties and growers.
Cose Bichery GSS R.22 is a 100% Pinot Noir Blanc de Noirs Champagne, made by COSE from grapes sourced from Domaine de Bichery in Gyé-sur-Seine, in the Côte des Bar. The wine comes from the La Fontaine du Noyer lieu-dit, planted on Kimmeridgian clay and limestone soils, with a west-facing exposure and vines planted in 1985 and 1987. GSS refers to Gyé-sur-Seine, while R.22 stands for the 2022 harvest.
The grapes were hand-harvested on September 2, 2022 and pressed at the grower's estate. The must underwent spontaneous fermentation with indigenous yeasts in used 228-litre barrels sourced from Guillaume Selosse, where the wine also completed malolactic fermentation and ageing. It was bottled unfined and unfiltered and disgorged in July 2024 without dosage, making it a Brut Nature. No sulphites were added during the winemaking process, and production was limited to just 1,564 bottles.
This is a deep, fresh and highly gastronomic Blanc de Noirs, combining ripe fruit with mineral character and clean acidity that brings tension and length. Barrel ageing adds texture and complexity while preserving the energy of the Pinot Noir. A very limited-production Champagne for those looking for terroir-driven wines, small-scale projects and zero-dosage expressions.
