Champagne Cose is the project of Victor Allier and Gil Conejo, founded in 2022 in Chouilly as a micro-négociant. They source small quantities of grapes from trusted growers and produce site-, variety- and vintage-driven wines rather than following a single house style.
Their approach is based on minimal intervention, natural fermentations and ageing in used oak barrels, including barrels sourced from Jacques Selosse. Production is extremely limited and, so far, their wines have been made without added sulphites, with the aim of showcasing the diversity of Champagne through different terroirs, grape varieties and growers.
Cose Bouvet BSL R.23 is a 100% Chardonnay Blanc de Blancs Champagne made by Cose from organic grapes sourced from Antoine Bouvet in Bisseuil, a Premier Cru village in the Grande Vallée de la Marne. It comes from the Les Rocheforts lieu-dit, a vineyard planted in 1958 on chalk soils and facing west and northwest, giving the Chardonnay a distinctly mineral, vertical and precise character. BSL refers to Bisseuil, while R.23 stands for the 2023 harvest.
The 2023 harvest was pressed using a Coquard vertical press, with spontaneous fermentation in 225-litre second- and fifth-use oak barrels. After bottling, the wine spent a minimum of 18 months ageing on its lees and was disgorged in July 2025 without dosage, making it a Brut Nature Champagne. Production was limited to just 1,632 bottles, reflecting Cose's artisanal approach.
The wine is linear, taut and deeply mineral, with a precise texture and a fine saline character that drives a long, vibrant finish. The combination of Chardonnay, chalk and oak ageing brings depth without sacrificing freshness, making it an especially gastronomic Champagne for oysters, seafood, fish and ingredient-driven cuisine.
