The grapes for this wine are grown on dry land in the Sierra de Chiva, Paraje Las Bairetas (halfway between Valencia and Requena), on clay and gravel soils. It is a joint project between the restaurant Las Bairetas (Chiva) and Alberto Pedrón from Sentencia. Natural vinification, crushing of de-stemmed grapes, fermentation with skins and stems for 6 weeks, then aging on lees in stainless steel tanks for 9 months. 2017 was the first vintage of commercialization of this wine with 600 bottles. Unclarified, unstabilized and without any additives except for some sulfur before bottling.
