Bertrand Gautherot set out on the path of his project in 1993, working old family vineyards, and converting them to biodynamic cultivation in 1998. The name of the winery is composed of the names of the 2 main vineyards: Vouette on Kimmeridgian limestone (the parent rock that extends all the way to Chablis) and Sorbée on Portlandien soil (gray limestone). It farms a total of 5 hectares and produces approx. 25,000 bottles per year.
Saignée de Sorbée is their Pinot Noir rosé made in the following way: whole bunches start the process by intracellular fermentation (we could call it semi-carbonic, without the presence of oxygen by CO2 protection), and after a short period the must is extracted off the skins, called the "bleeding" (of French term Saignée), to continue the fermentation as a rosé wine with the indigenous yeasts. Fermentation and ageing in large barrels before bottling and subsequent ageing on the lees for about 36 months.
The wine is not filtered, it is not stabilised or treated in any other way, it does not even have a dosage (it is brut nature) and only a minimum amount of sulphur is added for its preservation.
An great rosé champagne that can be enjoyed right now, but with ageing in bottle it refines and improves substantially!
This wine is made from the base wine of the 2020 vintage (R20), with disgorgement in 11/2022.
