Sotovelo is a white wine made from Palomino grapes from Pago Balbaina ("Cru Vineyard") and the famous white albariza soils of the Marco de Jerez. The winemaker Raul Moreno is the technical manager of this marvel from Puerto de Santa María, which comes from a 20-hectare dry-farmed vineyard that is being converted to organic cultivation.
The winemaking technique for this wine is similar to that used for a Fino or Manzanilla with the big difference that there is no added alcohol and the ageing time is shorter. The must ferments in concrete amphoras and big old chestnut barrels (700 l), where it also rests for 8 months under a veil of flor (a layer of yeast that protects the wine from oxidation).
The profile of the wine on the palate is aromatic notes of dried fruits such as almonds, toasted bread, saline, and hints of citrus freshness with green apple.
A pleasant wine to drink as it combines freshness with hints of umami & salty flavour. It can be served with Iberian acorn-fed ham, cured meats, varied preserves and pickles.
