Azienda Agricola Foradori has become a benchmark for Italian artisan wine thanks to Elisabetta Foradori's decisive drive since the 1980s. Her work was key to reviving and dignifying the native Teroldego variety, focusing on biodiversity, biodynamic viticulture and fermentation in amphorae. Today, Foradori symbolises authenticity, respect for the Alpine territory and a profound understanding of the vineyard as a living ecosystem, making it a cult winery for professionals and lovers of wines with identity.
Fuoripista was created in 2014 as a radical reinterpretation of Pinot Grigio in Trentino: fermented with its skins and aged in terracotta amphorae (Spanish tinajas) to offer texture, depth and character. Its name, “off-piste”, reflects precisely this decision to stray from the conventional path. The grapes come from two neighbouring plots, cultivated according to biodynamic principles. Now one of the great Italian wines made in amphorae, Fuoripista has redefined the potential of Pinot Grigio and established itself as an essential reference point for those seeking whites with structure, energy and authenticity.
Depending on the vintage, the whole grapes spend around 7-8 months fermenting in clay jars, where, curiously, they lose colour. Production is around 10-12,000 bottles per year.
Our impressions of the 2021 vintage: a surprising wine with a pale copper colour, offering a range of aromas of red fruits (red apple and plum, raspberry), herbs and dried wild flowers, pink pepper. On the palate, it is very elegant with moderate acidity, barely noticeable tannins and a somewhat creamy texture that prolongs the aftertaste.
