Bertrand Gautherot set out on the path of his project in 1993, working old family vineyards, and converting them to biodynamic cultivation in 1998. The name of the winery is composed of the names of the 2 main vineyards: Vouette on Kimmeridgian limestone (the parent rock that extends all the way to Chablis) and Sorbée on Portlandien soil (gray limestone). It farms a total of 5 hectares and produces approx. 25,000 bottles per year.

Fidèle is the house’s basic cuvée, the winery’s first label (first vintage bottled in 2001), made from Pinot Noir with a marked chalky profile because the grapes come from the Vouette vineyard (and other chalky plots).

The winemaking process is simple, fermentation with indigenous yeasts in large barrels (400 l), all racking is done by gravity, the second fermentation of 24 months on the lees; the wine is not filtered, stabilized or any other treatment, even without dosage (it is brut nature) and only a minimum amount of sulfur is added for preservation.

An affordable champagne that can be enjoyed right now, but with years in bottle it refines and improves substantially!

This wine is made from the base wine of the 2017 vintage, with disgorgement of 10/2019.
