Canarian wine is a booming fashion that is leaving us spectacular bottles for our tables. The Tisalaya wines by Miguel Morales stand out among the entire offer, some spectacular dry white wines that are made up of 50% of the Diego variety and 50% of the Malvasía Volcánica variety.

The Diego variety, also known as Vijariego, is a type of dry white grape that is grown almost exclusively in the Canary Islands. Tisalaya wines use a grape that the winery grows in Lanzarote, in a 1.45-hectare vineyard, located in the Timanfaya National Park, grown in the typical holes in the volcanic sand or rofe, 250 meters above sea level. Some vines are over 100 years old, making them extraordinarily long-lived. It is rare and there are not many wines that use it, which already offers a point of distinction to Tisalaya wines.

The harvest of this type of grape is done manually. The grapes go through a maceration process with skins that lasts about twelve hours, followed by manual pressing using a winery press and spontaneous fermentation. The aging lasts nine months and is carried out in stainless steel tanks on lees.
