There are more and more small producers who stand out for their cultivation and traditional production of all kinds of wines. Sexto Elemento wines are a great example of this. This winery began in the year 2000 as a family project that was characterized by its Bobal vineyards, a typical variety of Venta del Moro in the Utiel-Requena area, with organic certification in its production.
The winery’s best-known wine and the first one they produced, which you can find at BlancoTinto, is 6º Elemento. This Bobal red wine is made exclusively with natural ingredients, that is, only the grape itself without adding chemicals. 6th element is aged for twelve to eighteen months in French oak barrels, but with a non-traditional production: the wine ferments and is aged with lees during this period.
Native Pet Nat Blanco, an ancestral sparkling wine.
Both the production of sparkling wines and the production of orange wines are ancient and have ancestral techniques that our ancestors used to make their drinks. The Sexto Elemento winery has combined both methods in Nativos Pet Nat Blanco, an incredible combination of 80% Macabeo and 20% Tardana.
The Macabeo variety grapes are fermented with their skins following the traditional method of making orange wine for two weeks. At the end of this process, the product of the Macabeo wine is combined with the mostro pressed from the grapes of the local variety called Tardana, beginning the fermentation process again for two more weeks.
After a total month of fermentation, the wine is bottled with the lees and rests for fifteen months to integrate the carbon dioxide into the wine. It is disgorged by hand and closed with a crown cap. This process is long and complex, which leads to a small production of this spectacular and rare wine. Due to the complexity of its production, only 500 bottles were bottled.
