The Vodopivec estate is a one-man show directed by Paolo Vodopivec himself, devoted to a single variety since more than 25 years. All this hard work and concentrated efforts result in the excellence of the delicate local variety vitovska which originates and is still grown on the Italian side of Carso area and Krast over the Slovenian border. In the case of this wine, Origine, the grapes are destemmed and fermented on their skins in big oak casks (called botti in Italian). The fermentation and further maceration on the skins period is a rather short one, of about 15 days. Afterwards the wine spends 30 months of ageing in large oak bottis of 3.000 liters. Vodopivec's wines despite being fermented on the skins, show white wine appearance, of pale gold colour. The aromas remind wild herbs, white flesh fruit, while on the palate the wines are elegant, with long finish and mineral sensations, which make them a great companion for pairing with diverse dishes. Only 35 mg of SO2 is added at bottling.
