Rubén Díaz through his project "Viñadores de Gredos" gives us this unusual wine: an orange wine made with chasselas doré grapes from old vines (80+ years old) from Cebreros (province of Ávila), cultivated on granitic soil, fermented on the skins for 30 days, left in the barrel with air for an intentional oxidation which becomes a "mother" for a solera. This system allows to have an older base wine and each year to make a saca refreshing with the new vintage wine. This bottle is from the 2017 saca, about 900 bottles were made.
