A genuine wine, the first of its kind, a brisado or orange wine txakoli! The 2018 vintage is already the third although it is still called as “Uno Nuevo” (Bat Berri in Basque), the grapes of the Hondarrabi zuri variety come from a plot in Gernika at sea level.
The peculiarity of this wine is its elaboration: whole bunches of grapes are subjected to carbonic maceration, with their respective contact with the skins, for fermentation during 15 days in stainless steel tanks. The wine is then refined for a brief period of a couple of months in white clay amphorae.
The Itsasmendi winery continues to reduce the use of sulfur dioxide and only a minimum amount is added to this natural wine before bottling for its correct preservation.
Fresh, fragrant and complex, gastronomic and very easy to drink!
