Sentencia wines bring the most Valencian flavor to your table
The family winery “Sentencia” has given life to the new Sentencia wines from its own harvest, in order to maintain and protect a family legacy of good vineyards, which was almost completely uprooted.
The wines from the 2014 to 2018 vintages are grown in the Requena area, dry land and organically. This series of wines are red wines and contain 80% Bobal grapes and the remaining 20% Garnacha grapes. The good taste of these wines comes from their long fermentation in stainless steel tanks and thanks to their aging in French barrels for one year. Of each vintage, 3,000 bottles could be bottled. These can be bought for immediate consumption or to rest for a few more years.
Sentencia Las Bairetas 2017
This wine arose from a project with the Las Bairetas restaurant, located in Chiva, and Alberto Pedrón, owner of Bodegas y Viñedos Sentencia.
The muscatel variety grapes for this wine are grown in the Sierra de Chiva, Paraje de las Bairetas, on clayey soils and gravel. For its production, grapes are trodden after destemming and subjected to fermentation with skins and stems for 6 weeks. After 9 months of aging on the lees in a stainless steel tank, 600 bottles of this production could be bottled.
Sentencia Las Bairetas wines do not go through any clarification, stabilization process, or any added additives except for some of the sulfur before bottling.
The ancestral method for Sentencia wines
Unlike the Champenoise method, which is the most traditional for winemaking, Sentencia wines are characterized by having a single fermentation.
To obtain good wines, with the best flavor and sparkling well, they are made with destemmed and pressed Royal grapes, from vines over 60 years old, planted on calcareous soils and cultivated under ecological principles. To achieve a point of freshness in the wine, they add 20% Garnacha to their elaborations, and they are bottled before finishing the alcoholic fermentation process. Thus, it ends up being kept within itself the natural carbonic gas. These wines rest on the lees for a year until it is time to disgorge, a process by which the concentrate deposits that remain on the neck of the bottle are removed. As it is not clarified or filtered, it is possible that we will find some natural sediment.
Thanks to this ancestral method for his Sentencia wines, Alberto Pedrón managed to produce 900 bottles in the 2017 vintage and you can enjoy this fresh wine at odd hours or with an aperitif to your liking.
