From a very old vineyard, planted in 1872, from the “Los Navales” plot (surface of 0.42 ha), Ismael makes this Sin Rumbo in a very particular way. The grapes are macerated for a few hours, pressed in a vertical press and the must is transferred to barrels for fermentation. It is then aged in barrels for 10-11 months. Its different elaboration from other wines brings out a more “volatile” point. Only 2 barrels are produced per year.
